In Echternach, Archibald and Rachel De Prince welcome you to their hotel-restaurant, a former mill that was renovated just a year ago. Once bordered by a trout pond, this unique location combines rustic charm with a warm, inviting atmosphere. In barely a year, their bold vision has been richly rewarded: a Michelin star, the title of Young Chef of the Year from Gault & Millau, and, above all, the promise of inventive, local, plant-based cuisine that shines through in every dish.
Trained between the Namur Hotel School and the Paul Bocuse Institute, Archibald honed his craft under some of France’s finest chefs, including Franck Ferigutti and Alain Le Cossec, before refining his precision and sensitivity alongside Yannick Franques and later as sous-chef to René Mathieu at La Distillerie for eight years. This exceptional journey is reflected in his cuisine: simple, local, seasonally respectful—a symphony of terroir elevated by his passion for nature.
The chef invites you to experience a unique gastronomic journey with a tasting menu, entirely designed around carefully selected local products. A 100% plant-based version is also available for those who wish. When reserving, the details of the dishes are not revealed in advance, it’s a true surprise, reflecting the chef’s creativity and philosophy.

To accompany this moment, we have chosen our POLL FABAIRE Cult Crémant. Made from Pinot Noir Blanc de Noir and aged for a minimum of 24 months on lees, it reveals finesse and elegance on the nose, with delicate notes of red fruits. On the palate, it is refined, fruity, and enduring, perfectly complementing the sophistication and freshness of the chef’s dishes.
